How to Cook Prime Rib
Put meat in shallow pan, uncovered. Preheat oven to 375°.
Cook 1 hour, leave in oven.
Turn oven off 3-4 hours, DO NOT open door!
Turn oven back on to 300° for 45 minutes. Slice and Serve.
Stuffed Pork Chops
Cover and bake at 350° for 1 hour and 15 minutes. Then remove the cover and bake for 15 more minutes.
Options: for the last 15 minutes add a can of cream of mushroom soup over the top.
Bacon Wrapped Stuffed Chicken Breast
INGREDIENTS (Nutrition)
4 skinless, boneless chicken breast halves
1/2 (8 ounce) package cream cheese, sliced
4 slices bacon
1 teaspoon chopped fresh chives
1 (10.75 ounce) can condensed cream of chicken soup
1/2 cup mayonnaise
1/2 cup milk
1 teaspoon lemon juice
1/4 teaspoon ground black pepper
1 pinch salt
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C).
Pound the chicken breasts until flat. Put a slice of cream cheese and 1 teaspoon chopped chives in the
middle of each breast and roll up. Wrap each rolled breast with 1 slice of bacon and secure with toothpicks.
Place in a 9x13 inch baking dish.
In a medium bowl, combine condensed soup, mayonnaise, milk, lemon juice, pepper and salt. Mix until
smooth, then pour over chicken.
Bake in the preheated oven for 1 hour, or until no longer pink and juices run clear.
Ham with Cherry Sauce
"There's nothing I'd rather serve for Easter dinner or another springtime occasion than succulent baked ham.
My recipe features a rub that add flavor to a meat plus a delicious cherry sauce with a hint of almond.

INGREDIENTS
1 (8 pound) fully-cooked, bone-in ham
1 cup packed brown sugar
3 tablespoons maple syrup
1 teaspoon ground mustard
1/2 cup sugar
3 tablespoons cornstarch
1 cup cold water
1 (16.5 ounce) can pitted dark sweet cherries
2 tablespoons lemon juice
1 teaspoon almond extract
DIRECTIONS
Place ham in a roasting pan. Score surface of ham with shallow diagonal cuts, making diamond shapes.
Combine the brown sugar, syrup and mustard; rub over ham and press into cuts. Cover and bake at 325
degrees F for 1-3/4 to 2 hours or until a meat thermometer reads 140 degrees F and ham is heated through.
For cherry sauce, in a saucepan, combine the sugar, cornstarch and water until smooth. Add cherries. Bring
to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in lemon juice and extract.
Serve with ham.
Grilled Potatoes and onions
INGREDIENTS (Nutrition)
4 potatoes, sliced
1 red onion, sliced
1 teaspoon salt
1 teaspoon ground black pepper
4 tablespoons butter
DIRECTIONS
Preheat grill for medium heat.
For each packet, measure out 2 or 3 squares of aluminum foil large enough to easily wrap the vegetables,
and layer one on top of the other. Place some of the potatoes and onion in the center, sprinkle with salt and
pepper, and dot with butter. Wrap into a flattened square, and seal the edges. Repeat with remaining potatoes
and onion.
Place aluminum wrapped package over indirect heat, and cover. Cook for approximately 30 minutes, turning
once. Serve hot off the grill.
