Barbecued Spareribs
Ingredients
1 cup of butter
1 cup chopped onion
3 garlic cloves finely chopped
1/2 cup catchup
1/4 cup brown sugar
1 tsp salt
1-1/2 tsp pepper
1/4 tsp Tabasco sauce
1 tbsp lemon juice
1 tsp basil
1 tbsp chili powder
Preparation
Sauté the onions and garlic in butter till they are tender, add the remaining ingredients for the sauce, bring to
boil and simmer 5 min. Sprinkle the ribs with salt and freshly ground pepper. Weave them on a spit or lay
them on the grill. Broil very slowly over very low heat. If you spit them, let them roast about 20 min. and then
begin brushing with the sauce. Continue to brush every 15 min. or so until the ribs are cooked. If you are
using the grill, broil the ribs on one side, turn, and the brush the finished side with sauce. When the other
side is done, turn and brush also. Repeat the process two or three time until the ribs have a nice glaze but
are not burnt.
Old-Fashioned Fried Chicken
Ingredients
1 4-pound chicken
butter or oil
flour
2 cups milk or heavy cream mixed
salt
pepper
Preparation
Have the chicken cut into frying pieces. Wipe with a damp cloth and roll in flour seasoned with salt and
pepper. Press the flour firmly with your hands to be sure plently of it clings to the chicken. Heat butter or oil in
a large heavy skillet, the oil should be about an inch deep in the pan. When it is bubbly hot, but not burning,
add the chicken pieces and cook them on all sides until they are evenly browned.
Sprinkle with additional salt and pepper, cover lover the heat and cook gently until the chicken is tender. Turn
the chicken pieces several times during the cooking process. When the chicken is done, pour off all but the
last 4 tablespoons of fat. Blend 3 tablespoons of flour into the fat and slowly add the milk or cream mix,
stirring to be sure it does not lump. When the sauce is smooth and thick, season with salt and pepper and
serve with the chicken.
Frosted Chocolate Fudge Cake
Ingredients
1/2 cup unsalted butter
1/3 cup vegetable oil
1-1/4 cups sugar
1 cup semisweet chocolate chips for cake
1/3 cup milk
2 cups flour
1/3 cup of cocoa powder
1 tbsp baking powder
1/8 teaspoon baking soda
2 eggs
1/2 cup heavy whipping cream
1 tbsp light corn syrup
1-1/4 cup semisweet chocolate chips, for frosting
Preparation
preheat the oven to 325F
combine the butter,oil,sugar,1 cup of chocolate chips, milk and 2/3 cup water in a large saucepan and stir
over low heat until sugar and chocolate melts. Remove from heat
sift together the flour,cocoa,baking powder, baking soda into a bowl, beat into the chocolate mixture gradually
beat the eggs one at a time into the mixture. Pour into cake pan, bake for about 50 min.
To make the fudge topping bring the whipping cream and corn syrup to a boil, remove from heat and add rest
of the chocolate chips stirring to make it smooth. Then cool to thicken it then spread onto cake.
